Five Easy and Delicious Hatch Chile Recipes

Hatch chiles are New Mexico's gift to the world. Try these five recipes to see why.


Stretching north to south along the Rio Grande, you'll find world-renowned chiles being grown. Hatch Valley, New Mexico, cultivates one of America's favorite treats: Hatch Chiles. These are one of a kind and exclusively cultivated from this corner of the world. Think distinctly sweet, spicy, crisp, and smoky tasting chiles. Hatch Chile season is at its peak, running from early August to the end of September. Hatch green chiles offer a bit more bite, while aging them to ripened red Hatch chiles mellows them.

To cook, simply set your oven (this can also be done on your BBQ Grill) to 400°F. Put whole chile peppers on a lightly oiled baking sheet and place it in the center of your oven for about 20-30 minutes or until the skin of the peppers is lightly blackened. Occasionally flip and rotate each pepper to achieve even roasting.

Remove the stems, seeds and veins. Put chile pods into boiling water in a pan. The pods should be softened (about 20 minutes) with liquid after they have cooled. Prepare the chiles by weighing them down with a plate. Wash, dice, and use as much as necessary. You may use a knife for softened chiles.
