Small Luxury Hotels of the World : Small Luxury Cookbook

Small Luxury Hotels of the World (SLH) has published a luxury cookbook featuring a collection of handpicked recipes from the brand's portfolio of over 500 hotels in 80 countries.

To coincide with the release of the new cookbook, SLH has identified some of culinary insights to note at SLH hotels.

Asian Hotpot

Asian Hotpot is becoming increasingly popular, due in part to the rising interest in convivial dining and bold, spicy flavours.

Chef Nguyen Than Hieu and his team at Naman Retreat in central Vietnam have created their own Naman Special Hotpot featuring ingredients such as lemongrass, tofu, seafood and noodles.

Butterfly Pea Flower Tea (blue tea)

Butterfly Pea Flower Tea (blue tea) has been around for centuries but is only now getting global attention thanks to its high antioxidant content and incredible health properties including enhancing memory and decreasing stress.

The Racha, an eco-luxury beach resort in Phuket, Thailand, offers guests a welcome drink made with local Butterfly Pea Flower, lemongrass and organic Thai lime.

The flowers are grown in the garden of the property and will soon be included on the food menu.

Hyper-local cuisine

Traveller appetite for hyper-local cuisine has been driven by those wanting to taste food straight from the source and rediscover ancient and forgotten ingredients.

Casa Angelina Lifestyle Hotel on the Amalfi Coast, Italy, has recently introduced two new floral-based cocktails to its bar repertoire, designed to showcase oranges and lemons from the region.

El Lodge Ski & Bar in the mountains of Sierra Nevada, Granada, serves Riofrío organic caviar (indigenous to the Andalusian province) at its El Grill restaurant, accompanied by blinis and sour cream.

Les Sources de Caudalie in Bordeaux offers a vegetal lunch with dishes including nettle soup and wild daisy or strawberry gazpacho with immortelle flower ice cream.

Guests at the Archipelagos can experience a true taste of 'mythological' Greece with The Archipelagos restaurant´s Gastrosophy degustation menu (six to nine courses) created by Chef Dimitris Papadimitriou.

Ancient ingredients such as Vrasto cheese, Centaurea (artichoke) or Crithmum (sea fennel) are blended into modern recipes.

Surrounded by the woods and adjacent to the Tusket River, Trout Point Lodge Nova Scotia is one of the only properties in the world to feature Atlantic and Shortnose Sturgeon caviar on its menu.

Unique to the Acadian region, the fish is raised using wild aquaculture methods.

Wellness-led food

Wellness-led food options are inspired by guests wanting to focus on self-care and restoring balance on holiday.

HGU New York serves up a liquid lunch menu made entirely of freshly blended juices whilst the Ovolo Woolloomooloo in Sydney includes a plant-based restaurant featuring dishes such as kimchi dumplings, zucchini lasagna with pistachio pesto or hibiscus strawberry cheesecake.

Healthouse Las Dunas near Marbella is a wellness retreat offering water menus in its minibars outlining the composition of various water options for guests to choose how they wish to rehydrate.

Located within the elegant palatial building of the 5-star URSO Hotel & Spa in Madrid, Media Ración is the latest restaurant from chef Fernando Cuenllas and means 'half-portion' in English, reflecting the small quantities and sharing tapas plates that this venue specialises in.

Unique dining experiences

Unique dining experiences show that guests are increasingly seeking out-of-this-world dining options and ambience.

At Milaidhoo Island Maldives, the resort offers five different curated mood dining menus paired with wellness treatments including special baths, meditation and spa treatments to transport guests into a state of Zen.

Gastro-kids menus are cropping up in hotels thanks to the shifting trends in children's consumption food habits.

The Atlantic Hotel in Jersey, UK, has recently launched a special Little Ones menu created by head chef Will Holland that includes half portions of the a la carte menu such as Jersey crab with mango salsa or Roast Jersey beef sirloin with mushroom ketchup.

Althoff Hotel Villa Belrose in St. Tropez has introduced a Michelin-starred menu for kids including fillet steak, smoked salmon and a variety of vegetable side dishes.

All four restaurants at Velassuru Maldives now offer kids menus, featuring a selection of sophisticated options such as Vegan sushi rolls and Gouda and mozzarella arancini.
